Umai

An intimate omakase where the diner's best decision is to trust the sequence.

Identity and atmosphere

Translation results
Umai centers the experience around a wooden counter, with controlled lighting and minimal distractions. A photograph of the dining area reveals a minimalist space where everyone faces the food preparation; the usual distance between kitchen and table is absent. This design makes the *itamae’s* movements visible and ensures that the silence, the explanations, and the pauses between bites become part of the product itself.

Story and concept

Translation results
The project was conceived by executive chef and restaurateur Menandro “Nandro” Rodrigues, who separated the tasting menu from the rest of Haru. The establishment describes the *omakase* as an act of trust: the chef selects the best available *neta* (toppings) and arranges mild, complex, and intense flavors in a progressive sequence. At the time of its opening, culinary sources described a sixteen-course sequence highlighting fish from the Brazilian coast; the quantity, species, and composition may change, as such variation is precisely the foundation of the format.

An omakase changes according to the ingredients available. Specific fish, number of courses or prices should not be promised without reconfirming the booked seating.

My personal take as Ernestinho

Translation results
Umai does not compete with Haru by offering a wider range of choices; instead, it strips away options to achieve greater focus. I would recommend it to those who enjoy listening, observing the technique, and accepting a meal dictated by the day's best ingredients. It is a rewarding experience for Japanese cuisine enthusiasts and for intimate celebrations, though it might frustrate diners who want to select every piece, are in a rush, desire a setting conducive to lively conversation, or expect large portions with every course.

What to order and why

Translation results
Here, "what to order" means choosing the right format rather than picking out individual dishes. The official *omakase* menu is the primary recommendation, with the sequence determined by the kitchen; consequently, one wouldn't expect a guarantee of tuna, *uni*, or any specific species prior to the meal. It is worth asking about beverage pairings, what drinks can be ordered à la carte, and how dietary restrictions are accommodated. There is no budget-friendly option comparable to a standard sushi bar platter; if budget is the deciding factor, Haru offers more control. For a special occasion, the best investment is securing a seat, arriving on time, and being willing to experience the full progression.

The experience at different times of day

Translation results
The experience is an evening affair, organized into seatings currently scheduled for 7:00 PM and 9:30 PM, Tuesday through Sunday. The earlier slot allows time for a post-meal stroll along Copacabana, while the later one feels more like a night out and concludes late. Arriving early is important, as the entire group moves forward in a coordinated sequence. It is not suitable for a casual afternoon snack, an impromptu lunch, or flexible arrival times; even a delay of ten or fifteen minutes can disrupt the start of the culinary narrative.

My specific tip

Translation results
I would arrive fifteen minutes early, without wearing strong perfume and having disclosed any allergies when making the reservation. I would choose the first seating if I wanted to ask questions with a fresh mind and walk back early; I would book the second only if my day was already centered in the South Zone. The main mistake would be treating each course like a photo opportunity rather than a meal: observing is fine, but it is best to respect the timing indicated by the team and eat the dish when it reaches the intended temperature.

En Umai conviene confirmar el formato exacto de la experiencia antes de reservar: carta, secuencia guiada o menú degustación pueden tener duraciones y condiciones diferentes. Comunica alergias alimentarias con anticipación y pregunta si hay opciones de adaptación.

What to pair with a nearby visit

Translation results
Since the dinner requires punctuality, I would plan a brief itinerary: sunset at Posto 5, a return to Raimundo Corrêa, and an early arrival. I wouldn't add Sugarloaf Mountain or the city center to the schedule that same afternoon, as traffic could jeopardize your reservation time. After the meal, a short walk along Avenida Atlântica is enough; if you chose the 9:30 PM slot, I would arrange a taxi or a ride-hailing service right from the door, rather than turning the rest of the night into another long trek.
